Delice De Bourgogne (Burgundy): cows milk, animal rennet Sticky and very soft.
Colston Bassett Stilton (Nottinghamshire): cows milk, soft, sticky rind Rich, creamy and strong. Not too sharp.
Caprinelle Pur Chevre (Pyrennes): goats milk, animal rennet Smooth, oily texture, dense.
